Tired of eating on the meal plan or don't know what to cook in the apartments? Well take charge and learn how to cook. You might be thinking, "but Hunter, I don't live in the apartments. My dorm room kitchen is just a microwave and a mini-fridge." No problem! I will include many of the recipes for microwave cooking and simplistic ingredients. Are you looking to impress a date with some romantic cooking? Too cheap to go out and pay for the finesse of a good chicken and pasta dish? Well sink your teeth into this delicious chicken dish, a recipe provided by owner of First Crush Bistro, Tom DeRosa.



Ingredients:

Pre-cooked whole chicken

24 oz. rigatoni pasta

14.5 oz. can diced tomatoes

4 cups chicken broth

Parmesan cheese

2 garlic cloves (minced)

Salt and pepper

Fresh basil leaves (optional)



Recipe:

1) Spray a microwave-safe casserole dish with cooking spray.

2) Combine minced garlic, diced tomatoes, chicken broth, and the uncooked pasta.

3) Cover with a glass cover or plastic wrap and place in the microwave.

4) Cook on HIGH for about 15 minutes and stir every 5 minutes.

5) While the pasta is cooking, cut the chicken breast into bite size pieces.

6) While wearing cooking mitts, remove the dish from the microwave, and mix in the cubed chicken.

7) Garnish with some chopped fresh basil and parmesan cheese. Fork meets food, food meets mouth. Enjoy.



Make sure you use a microwaveable dish to cook the pasta. If you are not a fan of garlic or don't want to have "garlic breath," then try using only one clove or don't add it at all. However, garlic brings out a lot of flavor and is extremely healthy too! Check the pasta after the 15 minutes are up, depending on the microwave, dish, or other extraneous factors, the pasta might not cook all the way through. Try to determine whether the pasta is done by feeling a piece in your hand or taking a small test bite. If the pasta is not done, throw it back in the microwave and cook it in 2-3 minute increments, while making sure to stir and check if the pasta is done each time. Some people enjoy pasta very tender and others like it a little "al dente" (a little firm or tender crisp), you decide.

If you don't happen to have oven mitts lying around, try using a couple paper towels, by folding them multiple times. This will at least act as a barrier between your hands and the very hot casserole dish. When mixing in the chicken, it will most likely be a little cool from refrigeration. Make sure to stir well and let it sit for a few minutes, in order to let the chicken absorb the heat from the casserole. Bread also goes well with this dish, especially a nice crusty loaf like a baguette. If you have extra garlic try mixing it with some butter and heating it up in the microwave for about 15 seconds to make some homemade garlic bread.
